This galvanized steel unit measures 24 inches wide by 31 inches deep by 703/4 inches high and features a flush-mount, right-hinged door with a reinforced steel frame for long-lasting durability. The door and aluminized steel cabinet are insulated to retain generated heat, while the interior's perforated top enhances heat distribution. So the unit doesn't rock or wobble when the door is opened and product is loaded or retrieved, staff can raise or lower its 73/4-inch stainless steel legs to stabilize on uneven flooring.By igniting the pilot light, staff can quickly power on this Town SM-24-R-STD-N commercial smokehouse. Its analog thermostatic control can be adjusted between 150 and 550 degrees Fahrenheit, and staff can monitor incoming gas pressure with the included regulator. To minimize gas buildup, it's built with a safety pilot system, and its single gas valve is simple to control. When this unit is in use, the water pan must be filled to prevent grease fire; the water pan also establishes a steamy environment that minimizes shrinkage.
